Bread Crumb Mustard Chicken

Ingredients
Mustard Chicken
6 tablespoons dijon mustard
4 eggs
6 thin-pounded skinless chicken breasts, seasoned lightly with salt and pepper
1 cup gluten free flour
EVOO (substitute butter)
Optional:
Parsley
Coating
30/30/30 mixture of gluten free bread crumbs, parmesan cheese, and yellow cornmeal
Instructions

Combine the mustard and eggs in a bowl. Dip the chicken in the flour. Then dip the chicken into the mustard-and-egg mixture. Finally, dip the chicken into the coating.

Sauté the chicken in EVOO or butter, two or three at a time maximum. Do not crowd the skillet. Sauté until brown and crispy, about 3 minutes per side. Transfer to a plate lined with a paper towel to drain. Top with parsley and serve.
