Combine flour, sugar, 2 cups of milk, salt, and the egg in a medium bowl. Mix well.

Add plain seltzer water and 2/3 cups of milk. Mix well. Let mixture sit for 5 minutes.

Add small amount of avocado oil to a large non-stick pan. Swirl oil around pan so that entire surface of the pan is covered in oil. Using a laddle and holding the pan in one hand, drop the crepe mixture into the pan and swivle it around the pan so that a thin layer is achieved. Let the crepe cook for 1-2 minutes. Then, using a spatula, lift the crepe and flip, cooking the crepe on the other side for an additional 1-2 minutes, or until golden brown on both sides. Note: For the remainder of the crepes, additional oil is not necessary.
