GF Chocolate Chip Cookies

6-7 large cookies or 9-10 small cookies
Ingredients
2 cups finely ground almond flour (spooned & leveled)
2 tablespoons arrowroot starch
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 cup maple syrup
3 tablespoons water
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
1/2 cup chocolate chips or chopped chocolate, use more or less to taste
Sea salt flakes, for sprinkling
Instructions

Preheat oven to 375°F and line a baking sheet with parchment paper. Set aside.

In a medium bowl, mix together dry ingredients: flour, arrowroot, baking soda, and salt.

Add maple syrup, water, coconut oil, and vanilla, mixing just until combined. Stir in chocolate.

To make large cookies, roll out 2-3 tablespoon-sized balls of dough. To make small cookies, roll out 1 tablespoon-sized balls of dough.

Gently flatten the balls of dough. Bake for 8-10 minutes, until lightly brown. Don't overbake.

Remove and let cool on the pan thoroughly to keep them from falling apart easily. Sprinkle with a bit of sea salt flakes, if desired.
