Peach Pie

  • Dough
  • 1 Mix flours, sugar, xanthan gum, and salt in a large mixing bowl.
  • 2 Cut in butter until mixture is crumbly and no large chunks of butter remain.
  • 3 Stir together ACV and eggs until well blended and add to the flour mixture. Slowly stir in cold water one tablespoon at a time, just until dough holds together. If omitting eggs, mix ACV with 2-3 tablespoons of water before adding to the flour mixture.
  • 4 Divide dough in half and shape into round, flat discs. Wrap each in plastic wrap and chill for 20-30 minutes in the fridge. While the dough chills, prepare the filling.
  • Filling
  • 1 Preheat oven to 400°F.
  • 2 Peel peaches, remove the pit, and cut into small cubes. Place cut peaches into a bowl and stir in coconut sugar, lemon juice, cinnamon, arrowroot starch, salt, & vanilla extract.
  • Pie Assembly
  • 1 Lightly grease a 9-inch pie plate. Remove one disc from the fridge and place between two pieces of parchment paper or plastic wrap. Roll into a large circle, a few inches larger than the pie plate.
  • 2 Use the parchment paper or plastic wrap to invert the dough into the plate. Gently press to fit into the bottom of the plate and up the sides of the plate. If the dough breaks, just press it back together. Add any excess dough to the second disc.
  • 3 Pour the filling into the pie pan.
  • 4 Remove the second disc from the fridge and roll out into a slightly thicker circle than the first disc.
  • 5 Invert the rolled-out second disc over the top of the pie to cover it. Press the tines of a fork into the edges of the crust to create small indented lines, rotating the pie plate until you have created the pattern all the way around the pie.
  • 6 Optional: Beat 1 egg with 2 teaspoons of water and use a pastry brush to brush the egg wash all over the dough to help it brown in the oven.
  • 7 Place pie onto a baking sheet and place into the preheated oven on the middle rack.
  • 8 Bake until pie is golden brown and filling is bubbling (or if you're able, pierce a peach to see if it's tender), about 45-60 minutes.
  • 9 Let pie cool for an hour at room temperature, then place in the refrigerator overnight.
